You can take the best of any class (Skills, Stats, Abilities, etc) and pile them all on top of each other to create a more powerful 1st level pc than you could before where you were constrained and the abilities/skills/stats were spread out across the different races.
And besides, I like my dwarves as fighters, elves as mages, halflings as thieves, etc. I don't care if its a stereotype.

I gave out the "UA revised ranger" (which, BTW, has been scratched by WOTC) and then a player took the Dread Ambusher build from Tashas and stacked it with the UA ranger. I regretted it the moment I saw how power-gamey it was. Not an issue for me. I have experience with power-gamers (Zeim! et al) and the player gave the PC up after I targeted all his weaknesses and buffed the monsters (power game me, will ya? Bwahahahaha).
Like Zeim, I like strong racial species characteristics. I really don't like multi-class, build your own PCs either. It's what made D&D 3.5 my least favorite version. I speak mostly as a DM. As for 6e, let's see. And with our last face to face game, I was using gritty reality so a short rest was 8 hours and a long rest 7 days! And the version we were playing that you remember was a 5 minute short rest.
In this game we've been using the standard option.
