Mostly I made a pool of dice, and ran it out of the nearby waste bin. IE I said Roll Attribute plus skill and give me the number of successes vs an arbitrary diff I set. Then went from there. 90% of it was description and story telling. My players pointed out right away that I was making it up, and I just said yes. Are you enjoying the story? A decade later they were still saying yes.

As far as wounds and or damage, I mostly made it descriptive. Only thrice did PCs die, and all of those were mutually agreed upon ends, as it moved the story forward. Generally though a vampire against a human, not really much of a danger. The human usually has the short end of the stake, so to speak.
