I've since realised I should be grateful that these combats are only lasting three rounds. School kids can take a looong time to finish their turn.
So by that rationale I've decided to keep pushing higher CR encounters at them and simply have a contingency plan if I TPK.
For example, Dragon of Icespire Peak has the PCs sallying around Phandalin, saving one resident after the other from various threats (caused by the titular dragon). When the PCs fight the dragon they'll be 3rd-level versus the CR6 dragon. In the event of a TPK I can have all the residents they've saved turn up to save them. A sort of angry mob that can get the PCs back on their feet without stealing the limelight. It went well, no TPKs though three of four PCs dropped to 0 hp during the dragon encounter. I could've pushed to a TPK but they'd walloped the dragon with some big hits, the dwarf landing a max damage crit. Since we were running out of playtime anyway I had the dragon fly off with its tail severed and vowing revenge on the party. The titular dragon in the module is called Cryovain and the party came up with the nickname "Cryolame", which they thoroughly enjoyed hurling after it.
Next up they want to play Marvel Super Heroes. All-in-all, I thought Dragon of Icespire Peak was a solid module. I preferred the variety of monsters in Lost Mine of Phandelver but Icespire has a wider variety of encounters, including a dungeon that's mostly traps, and the dragon is the final fight whereas in Lost Mine it's a... actually I can't remember!
